Washed arabica from the Lalitpur hills, picked November through December at 1,300 meters and roasted in Dallas–Fort Worth.
Cold nights at altitude stretch ripening across nine to ten months. The cherry takes its time, the bean stores more sugar, and the seed comes out dense enough to hold its structure through the roast. That sweetness is why this cup drinks the way it does — chocolate and malt up front, soft vanilla underneath, a buttery weight that stays after the swallow.
Mild acidity, clean finish. Cupped at 83.75 with zero primary defects.

The Story
Grown slow in cool Himalayan air on smallholder terraces in Lalitpur. Fully washed, sun-dried on raised beds, then roasted to a balanced medium in Dallas — where the mountain's sweetness turns to Honey and Chocolate.
